Chocolate Coconut Nests with Candy Eggs

These homemade chocolate coconut nests are a perfect spring dessert or edible decoration.

Ingredients
  • 3 oz. semisweet chocolate
  • 2 oz. milk chocolate
  • 2 tsp. coconut oil
  • 1 cup flaked sweetened coconut
  • 6 Tbsp. warm water, divided
  • candy eggs
  • gel food colors
Special Equipment
  • chocolate square cub mold (any shape can be used)
  • 1 small jar with lid
Instructions
  1. Melt semisweet chocolate and coconut oil in double boiler.
  2. Remove from heat when melted and stir in milk chocolate until melted.
  3. Pour chocolate into mold and refrigerate until set.
  4. Unmold the chocolate cups.
  5. Add coconut to each cup.
  6. Top with three small candy eggs.
How to Color Coconut
  1. Place 1 Tbsp. warm water into small bowl
  2. Dip the tip of a toothpick into the gel color.
  3. Place the tip of the toothpick with the gel into the bowl of warm water and stir until the gel is dissolved.
  4. Place 1 Tbsp. coconut into the jar.
  5. Pour about 1 tsp. of the colored water into the jar.
  6. Seal the jar with the lid.
  7. Shake the jar until the coconut is evenly colored. If needed, add more colored water and shake again.
  8. Pour the colored coconut onto parchment paper or a paper towel to dry.
  9. Rinse the bowl and jar and repeat for the other colors of coconut.
Notes
This recipe makes 6 small chocolate cups. However, the recipe can be doubled or tripled for a larger batch.
